The difference between a regular city podi and a true Thanjavur blend lies in one word: Varuval — the roast.

We don’t stop at golden-brown.

Our lentils are slow-roasted in heavy iron kadais until they reach a deep, nutty mahogany. That extra few minutes changes everything. The flavour becomes fuller. Smokier. More grounded.

In the Delta, this “dark roast” isn’t a trend. It’s tradition.
