A sambar is only as good as its podi. This is a fact that every South Indian home cook knows and that most commercial sambar powders choose to ignore.
Our Sambar Podi is the same blend we use in our own kitchen every day — the same one that goes into the sambar that our daily meal customers order repeatedly, the same one that has earned our kitchen a 4.9 rating on Google. It is made from coriander seeds, cumin, black pepper, dried red chillies, chana dal, urad dal and curry leaves, slow-roasted in specific sequence so that each spice reaches its optimal point before the next one goes in.
There is no single-temperature, throw-everything-in approach here. Each spice has a different roasting time. Respecting that is what separates a Sambar Podi that makes sambar taste alive from one that makes it taste flat.

How to Use It
Use one to one-and-a-half teaspoons per cup of cooked toor dal for a standard sambar. Add to the tamarind base after the vegetables have softened — not at the beginning — so the podi’s flavour blooms in the liquid rather than frying out in the oil. Adjust quantity based on heat preference.
