Maa Ladoo is not a sweet you find in sweet shops. It is a sweet you find in homes — specifically in the homes of people who know what roasted gram flour smells like when it has been given exactly the right amount of time in ghee.
Made from coarse-ground roasted gram flour (pottu kadalai maavu), Maa Ladoo has a crumbly, melt-in-the-mouth texture that is unlike any other ladoo. It doesn’t hold together the way a besan ladoo does. It has a slight roughness, a nuttiness, and a fragrance from the cardamom and ghee that fills the room when you open the pack.
At Malu’s Kitchen, we make our Maa Ladoo in small batches, roasting the gram flour slowly until the raw smell is completely gone and the nutty aroma takes over. Only then does the ghee go in. Only then do the ladoos get shaped.
