Maavadu is a seasonal pickle. It exists for a few weeks each year — the narrow window when raw mangoes are still tiny, no bigger than a large marble, firm enough to hold their shape in brine but tender enough to absorb the spice. Miss that window and there is no Maavadu until next season.

In Thanjavur homes, the arrival of Maavadu marks a moment. Grandmothers make large batches. The ceramic jars come out. The whole baby mangoes go in — with mustard, turmeric, red chillies, and cold pressed gingelly oil — and the jar is sealed and set aside. A week later, the brine has turned golden-orange, the mangoes have softened just slightly, and the first jar is opened.

At Malu's Kitchen, we follow this same rhythm. Our Maavadu is made only during the season, only with mangoes at the right stage, and only in the quantities we can make properly. We do not make it year-round. When it is available, it is available. When it is not, it is not.

The taste is unlike any other pickle — the whole baby mango gives you a gentle tang rather than the sharp bite of a cut Avakkai, the brine is fragrant with turmeric and mustard, and the texture is soft but intact. It is the pickle of summer mornings, of curd rice packed for school, of meals that needed one more thing to feel complete.

How to Eat It

Place one or two whole Maavadu alongside curd rice — this is the definitive pairing. The cool curd, the fragrant brine, the soft baby mango — nothing else is needed. Also excellent with rasam rice, plain rice and ghee, or as a palate cleanser between heavier dishes in a full Thanjavur meal.
