Tapioca Appalam from Kallidaikurichi is a specific regional variety — made from tapioca (cassava) starch rather than rice or urad dal, it has a distinct translucent quality when fried and a lighter, crisper texture than either of the more common appalam varieties.
Kallidaikurichi, a small town in Tirunelveli district, is known for this particular preparation. The tapioca starch produces an appalam that fries to a glassy, almost see-through golden colour and breaks with a very clean snap. The flavour is more neutral than urad dal appalam, making it a versatile accompaniment to any rice dish.

How to Prepare It
Deep fry in hot oil for 5–8 seconds — tapioca appalam fries very quickly and can burn if left unattended. It will puff and turn translucent golden almost immediately. Drain on paper and serve at once.
