Garlic Thokku is what happens when you give garlic the same respect that a Thanjavur kitchen gives tamarind and red chillies — slow-cooked in gingelly oil until the sharpness is gone and what remains is a deep, savoury, almost caramelised intensity that makes everything it touches taste better.
Ours is made from fresh garlic slow-cooked in cold pressed gingelly oil with sun-dried red chillies and a precise combination of mustard, turmeric and salt. The cooking time matters — too short and the raw garlic edge remains, too long and it loses its character. We cook ours until the oil separates and the thokku turns a deep reddish-brown, which is the sign that the flavour has fully developed.

How to Use It
Mixed into curd rice — the definitive pairing. A small spoon stirred through hot plain rice. As a side with idli, dosa or chapati. As a spread on toast for a deeply South Indian breakfast. Use sparingly — it is concentrated, and a little goes a long way.
