Kuchi Vadam is the vadam on a stick — rice flour batter piped into small stars or rosettes around a thin stick, sun-dried, and fried just before eating. The stick is not decorative; it is how the vadam is held while frying, and it gives Kuchi Vadam a shape that fries more evenly than a flat vadam.
In Thanjavur homes, Kuchi Vadam is made in large batches during the summer months when the sun is strong enough to dry them quickly. Children help with the piping. The sticks are laid out in rows on large trays or mats in the courtyard. A few days later, they are collected, stored in large dabbas, and eaten over the next several months.

How to Prepare It
Hold the stick and lower the vadam into hot oil. It fries in under 10 seconds. Remove before it darkens beyond pale golden. Drain and serve immediately as a side to any rice meal.
