Manga Thokku is raw mango cooked down into a spiced, concentrated preserve — closer to a chutney in texture than a pickle, but more complex than either.

Unlike Avakkai or Maavadu, where the mango pieces stay whole and the masala coats them, Manga Thokku involves grating the raw mango and cooking it slowly in gingelly oil with mustard, red chillies, turmeric and hing until the moisture evaporates and what remains is a thick, intensely flavoured paste where the mango’s tang and the spices are completely inseparable.

It is the most versatile of our mango preparations. It works with rice, with idli, with dosa, with chapati — wherever you want that characteristic raw mango sourness in a form that is ready instantly, without the bite of a whole mango piece.

How to Use It

A teaspoon mixed into hot rice with ghee. As a side with idli or dosa — it replaces chutney completely. Stirred into curd rice for a tangy finish. On toast with butter for a breakfast that is genuinely interesting. The uses are broader than you expect.
