Ullund Appalam — urad dal papad — is the appalam of festival meals and special occasions in Tamil Brahmin homes. Thinner than most commercial papads, more fragrant from the black pepper and cumin ground into the dough, and with a distinct nuttiness that comes from the urad dal itself.

Our Ullund Appalam is made from the same urad dal we use in our daily kitchen — soaked, ground and worked into a firm dough with black pepper, cumin and salt, then rolled very thin and sun-dried. The result is an appalam that fries quickly, puffs evenly, and has a more complex flavour than plain rice appalam.

In a traditional Thanjavur meal served on a banana leaf, the appalam sits in the upper right corner — a fixed, non-negotiable part of the spread. This is that appalam.

How to Prepare It

Deep fry in hot oil until it puffs and turns a pale golden colour — urad dal appalam fries faster than rice appalam, so watch it closely. Or roast over a low flame for a lighter, less oily result. Serve immediately as part of a full rice meal.
