Our Garlic Paruppu Podi follows the same slow-roasted dal base as our regular Paruppu Podi — toor dal, chana dal, red chillies, pepper, hing — with one significant addition: sun-dried garlic, roasted until its sharpness mellows into a deep, sweet-savoury warmth that runs through every spoonful.
Garlic Paruppu Podi is not for everyone. It is for people who know exactly what they want — a podi that is more complex, more aromatic, and more assertive than the plain version. The garlic does not shout. It rounds out the roasted dal and adds a dimension that makes the podi equally good on idli, dosa, or rice with ghee.

How to Use It
Same as Paruppu Podi — into hot rice with ghee, or dry with idli. The garlic flavour intensifies slightly when mixed with ghee, which is a good thing. Keep refrigerated after opening for maximum shelf life.
