Malu's Authentic South Indian Lemon Pickle 180 Gms

Lemon Pickle is the most straightforward of South Indian pickles in concept and the most unforgiving in execution. The ingredients are few: lemon, salt, red chillies, mustard, turmeric, gingelly oil. There is nowhere to hide a mistake.

The key is time. Lemon pickle made last week tastes sharp and raw. Lemon pickle that has been allowed to mature — the salt drawing out the juices, the oil carrying the spice deep into each piece, the bitterness of the rind slowly mellowing — tastes like something entirely different. Rounded, complex, deeply satisfying.

Ours is made and aged before packing. We do not rush the process. The result is a lemon pickle that is tangy and spiced but never harsh, with a natural golden colour from the turmeric and a clean finish from the cold pressed gingelly oil.

How to Use It

A small piece alongside curd rice is the classic pairing. Also works with dal rice, rasam rice or plain rice with ghee. As a palate cleanser between heavier dishes in a full meal. Use a dry spoon and keep away from direct sunlight for maximum shelf life.
