Elai Vadam is one of those things that looks simple and is anything but. Thin sheets of rice flour batter — flavoured with cumin or green chilli — spread carefully on banana leaves or plastic sheets, sun-dried over several days until they are completely dry and stiff, then fried just before eating into light, crisp, translucent wafers.

The banana leaf drying is not incidental. It imparts a faint green fragrance to the vadam that no other drying surface replicates. This is why Elai Vadam from a home kitchen tastes different from anything commercially produced — the process cannot be rushed or substituted without losing the character of the product.

Ours is made in small batches, dried the traditional way, and packed while still dry and fresh.

How to Prepare It

Deep fry in hot oil — Elai Vadam fries in seconds. It will puff immediately and turn pale golden. Remove quickly, drain well, and serve alongside rice meals as a light, fragrant accompaniment. Also excellent with curd rice.
