Madras Mixture is a snack that has been a fixture in South Indian homes for generations — a combination of sev, fried dal, peanuts, curry leaves and spices that manages to be simultaneously light and deeply satisfying.
The key to a good Mixture is balance. Too much sev and it becomes floury. Too few peanuts and it loses its substance. The spice should be present but not aggressive. And everything must be fried properly — each component to its own correct point of crunch, then combined.
Ours is made in the Thanjavur home kitchen tradition — small batch, each component fried separately, combined while still warm, and seasoned at the end. The cashews are a generous presence, not a token one. The curry leaves are fried crisp into the mix. The sev is thin and light, not dense or doughy.
