Thenkuzhal is the most refined of the murukku family. Where Mullu Murukku has ridges and texture, Thenkuzhal is smooth — pressed through a round hole die into long, even coils, then fried until it achieves a particular kind of light, hollow crunch that dissolves almost immediately on the tongue.
The name itself is evocative: then means honey in Tamil, kuzhal means tube or pipe. Not because it contains honey, but because a well-made Thenkuzhal should melt as effortlessly as it.
Ours is made from a simple, precise combination of rice flour, urad dal flour, butter, cumin and hing. The butter is essential — it gives Thenkuzhal its distinctive tenderness and prevents it from being hard or heavy. We use no shortcuts on the butter quantity, which is why ours stays light and doesn’t leave an oily aftertaste.

How to Eat It
Pure and simple with filter coffee. Thenkuzhal does not need a chutney or a dip — its flavour is complete on its own. Best eaten within a week of opening for maximum crunch.
